Where is your Pot Roast?

That was my question to the butcher. My signiture dish for our work potlucks is a Pot Roast. I get rave reviews and frequent requests that I make it. So I make it.

I usually get the meat on the way home from work the night before - quite often scooping a last day of sale package with some good
coupons on it to sweeten the deal.

Well there was no pot roast. None, nada, zip, zero, zilch. I had them call for an "associate" from the meat department and he assisted me. Seems there is a special on prime rib and that is all they have in right now.

Pffffft, that's not good for a pot roast, and I don't want to get workmates hooked on prime rib.

So instead I bought stewing beef and am making a meat stew just as I would as if it was a potroast ( but with smaller pieces of meat...)

    Can you post the recipe for the pot roast? I need all the help I can get. I'm just not very good at roasts. Smile

    Yummy's Pot Roast

    A pot roast (the name of the cut can vary - look for something that indicates it is for pot roast or slow cooking)

    1 package lipton (or no name) onion soup mix

    1 cup wine or beer (no more)

    2-3 cloves garlic cut or not up to you (optional).

    Put all ingredients in slow cooker, cook for 6-8 hours on low

    That's it. Serve with veggies and your choice of starch. i don't like cooking my veggies and taters in with my meat so I always do it this way.

    Sounds yum! I have a double roaster and thats how we do roasts. Usually turns out great as the meat steams and comes out melt in your mouth!

    mm yummy I will have to put my crockpot to use and cook up that pot roast. I have never had a pot roast in my life. Is it a big chunck of meat that you have to carve up?

    Mine turns out fork tender every time! so not a ton of carving but it will make enough for a few meals! Great if you have a big family or don't mind leftovers!

    Something that I do with the left over roast is that I pull the meat apart in threads as that's how it will come apart. I saute green peppers, onions, garlic, oregano, cumin, and bay leaf. After it sautes, I add 1 small can of tomato sauce, add 1/4 cup to a 1/2 of wine, pimentos and some of the juice, sliced potatoes, sliced olives and I let it come to a light boil, then lower it and let it cook for about 30 minutes and serve it over white or any kind of rice. It's a great way to use the left overs. Before that, I use a portion of it for vegetable beef soup as well. It can make 3 meals.

    There was some stew left over which was never the case with the roast. But the feedback I got on it was good! I'll make the pot roast in the future rather than the stew I think - it seemed more popular.

    I"m tempted to make myself a hot roast beef sandwich with some of the leftovers and use the some of the rest to make some soup! Though depending how busy the next few days are it might just go in the freezer (labelled) for future use.
